Six-Layer Dip

It is officially basketball season again.  I am a huge Bulls fan, and so happy to have them (and the rest of the NBA, really) back.  For game nights and afternoons, chips and dip are the perfect complement to basketball’s greatest.  I have been making this dip for a few years now, and have brought it to super bowl and NBA playoff parties.  It is really easy to prep beforehand and then pop in the oven of your host.  Make it for your next basketball/hockey/football potluck.  No one will notice its vegan.

Six-Layer Dip, adapted from The Kind Diet

Ingredients

  • 1 16oz can of refried beans (look for refried vegetarian black beans by Amy)
  • 2 limes
  • 3 avocados
  • 16oz of vegan sour cream
  • 1 tbsp. chili powder
  • 1 tsp. ground cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp sugar
  • 1/2 tsp. salt
  • 1 clove garlic, minced
  • 1/2 cup diced mild green chilies, or 2 jalapenos, minced
  • 4 tomatoes, chopped
  • 1-1.5 cups shredded cheddar (or mexi-blend) vegan cheese

Directions

Layer 1: Spread beans on the bottom of a glass 8x8 pan
Layer 2: Mix the juice from the limes with mashed avocados in a bowl,
spread on top of beans
Layer 3: Stir sour cream with spices, sugar, salt and garlic and spread over avocado
Layer 4: Sprinkle chilies or jalapenos on top
Layer 5: Sprinkle tomatoes on top
Layer 6: Sprinkle cheese on top

Cook for 15-30 min at 350F, until hot and bubbly.  Serve with your favorite tortilla chips.
