Apple Pie Cheesecake


A made this one.  It was fantastic.  All you need is a few vegan staples and a food processor and you too can make heavenly cheesecake!

Apple Pie Cheesecake, adapted from Made Just Right
Ingredients:
1 cup vegan graham cracker crumbs
3/4 cup rolled oats
1/4 cup brown sugar
1/2 cup melted Earth Balance Buttery Spread
2 8oz containers of vegan cream cheese
2 tbsp. corn starch
2 tbsp. water
1/2 cup brown sugar
1/4 cup white sugar
1/2 tsp. cinnamon
1/8 tsp. ginger
2 tsp. vanilla
1/4 cup all purpose flour
1/4 cup rolled oats
1/4 cup brown sugar
1/2 tsp. cinnamon
2 tbsp. melted Earth Balance Buttery Spread
1 large apple - peeled and sliced

Directions:

  1. Preheat your oven to 350F.
  2. In a food processor, blend together the graham cracker crumbs, 3/4 cup rolled oats, and 1/4 cup brown sugar until well combined and powdery. After you’ve melted your 1/2 cup of Earth Balance Buttery Spread, pour it into the crust mixture and process until well combined.
  3. Pour into a pie pan or springform pan and press down firmly and form the crust along the edges of the pan.
  4. In a small bowl, whisk together the corn starch and water. In your food processor, blend together the cream cheese, 1/2 cup brown sugar, 1/4 cup white sugar, 1/2 tsp cinnamon, 1/8 tsp ginger, and 2 tsp vanilla. Then add your cornstarch. Once well combined, pour on top of your graham cracker/oat crust.
  5. Arrange the thinly sliced apple on top of the cheesecake in a single layer.
  6. Mix together your 1/4 cup flour,1/4 cup oats, 1/4 cup brown sugar, and 1/2 tsp cinnamon until well combined. Stir in the 2 tbsp of melted Earth Balance Buttery Spread on top of the apples.
  7. Bake at 350F for 40-50 minutes. Once it’s done cooking, cool for 15 minutes.
  8. The cheesecake is better when it’s allowed to set overnight!
