What to do with bananas that go brown? Make the perfect banana bread. This may be my favorite recipe. In fact, I often find my self buying extra bananas just to let them soften so I can make this go to bread. Also, chocolate makes everything better.
This dish is best when it is hot and gooey.
Peanut butter banana bread, adapted from Vegetarian Times
1 cup whole-wheat flour
3/4 cup light brown sugar or raw sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
3 medium soft bananas (2 mashed, 1 sliced)
1/3 cup + 1Tb unsweetened crunchy peanut butter
1/4 cup plain greek yogurt
1 large egg
2 Tbs. canola oil
3/4 cup semisweet chocolate chips
Preheat oven to 350F. Coat standard loaf pan with cooking spray. Combine flour, sugar, baking powder, baking soda and salt in large bowl.
Whisk together 2 mashed bananas, peanut butter, yogurt, egg and oil. Stir banana mixture into flour mixture until combined. Fold in chocolate chips. Scrape batter into prepared loaf pan. Top with sliced banana.
Bake 50 to 60 minutes, or until toothpick inserted in center comes out with a few moist crumbs clinging to it. Cool on rack 15 minutes before unmolding. Cool completely, then slice and serve.
